Dark chocolate contains the most cocoa mass
and therefore makes it a very rich chocolate.
The main ingredients in a high quality dark
chocolate blend are: cocoa mass, cocoa butter,
sugar, vanilla and an emulsifier such as lecithin.
The higher the percentage of cocoa mass, the more bitter the chocolate will taste. Generally dark chocolate with a cocoa mass content of over 65% tastes more bitter, but making it also a healthier option due to less sugar content. The dark chocolate we use contains 53.8% cocoa mass,giving a wonderful rich, full flavour without being too bitter.
