Dark chocolate, also known as plain chocolate
gives you a very rich chocolate flavour. Four
main ingredients are part of most dark chocolate
blends: cocoa mass (sometimes also called cocoa
paste or cocoa solids), cocoa butter, sugar and vanilla
and an emulsifier such as lecithin..
The higher the percentage of cocoa mass, the more bitter the chocolate becomes. Dark Chocolate over 65% cocoa mass would be quite bitter and somewhat unpleasant for most people to eat. The chocolate we use contains approx. 58% cocoa mass, giving a wonderful rich, full flavour without being too bitter.
