White Chocolate
White chocolate has the highest amount of cocoa
butter with no cocoa mass at all and therefore is
technically not really a chocolate. White chocolate
is made up of cocoa butter, sugar, milk solids and
vanilla as well as an emulsifier such as lecithin.
White chocolate is the creamiest of all chocolates,
but without the bitter cocoa mass tends to be also
the sweetest on the palate.
